The 2nd and 3rd ones down or working nicely for me. The bottom one is also very good one. The issue with the top 1 is that you're looking into the light source and trying also to bring up detail in the face. The 3rd one down is a much better approach as a silhouette. This is a nice idea to do this work at a diner with the large windows. Your subject is a happy camper and very cooperative. If I had to pick one favorite I suppose it would be the 2nd one down.
